Ingredients:
1 cup rolled oats
1/2 cup natural peanut butter (unsweetened)
1/4 cup honey or maple syrup
1/4 cup crushed pretzels (plus extra for coating)
1/4 cup chopped roasted peanuts
1/2 tsp vanilla extract
1/4 tsp sea salt
Optional: 2 tbsp chocolate chips (for added sweetness)
Instructions:
In a large mixing bowl, combine the rolled oats, crushed pretzels, chopped peanuts, and sea salt.
In a separate microwave-safe bowl, gently warm the peanut butter and honey/maple syrup for about 20-30 seconds, until they are slightly softened.
Remove the peanut butter mixture from the microwave and stir in the vanilla extract.
Pour the peanut butter mixture over the dry ingredients and mix well until all the ingredients are combined evenly. If desired, fold in the chocolate chips at this stage.
Place the mixture in the refrigerator for about 10-15 minutes to make it easier to handle.
Once the mixture has chilled, take small portions and roll them into bite-sized balls using your hands.
Roll each energy ball in crushed pretzels to create a crunchy outer layer.
Place the finished energy balls on a parchment-lined tray and refrigerate for an additional 10-15 minutes to set.
Once the energy balls are firm, transfer them to an airtight container and store them in the refrigerator for up to two weeks.
These Energy Balls Salted Peanut Butter Pretzels are not only a fantastic on-the-go snack but also a great pre- or post-workout bite. They provide a healthy dose of protein and fibre while satisfying your taste buds with the combination of salty pretzels and creamy peanut butter.
