Ingredients:

1 cup old-fashioned rolled oats

1/2 cup dried apple slices, finely chopped

1/4 cup almond butter or nut butter of your choice

1/4 cup honey or maple syrup

1 teaspoon ground cinnamon

1/4 teaspoon ground nutmeg

1/4 teaspoon vanilla extract

A pinch of salt

Instructions:

In a food processor, pulse the rolled oats until they're broken down into a coarse texture.

Add the dried apple slices to the food processor and pulse again until they are well incorporated with the oats.

In a mixing bowl, combine the oat and apple mixture with almond butter, honey or maple syrup, ground cinnamon, ground nutmeg, vanilla extract, and a pinch of salt. Mix well until all the ingredients are thoroughly combined.

Place the mixture in the refrigerator for about 10-15 minutes. This will make the mixture easier to handle and shape into balls.

Once chilled, take small portions of the mixture and roll them into bite-sized balls using your hands. If the mixture is too sticky, you can lightly coat your hands with a bit of oil.

Place the energy balls on a plate or baking sheet lined with parchment paper and let them set in the refrigerator for another 10 minutes.

Once the energy balls are firm, transfer them to an airtight container and store them in the refrigerator for up to two weeks.
